A-Xia Restaurant is the institution most often cited by Tainan food writers as the single restaurant that codified Tainan cuisine as a distinct Taiwanese tradition. Opened in 1940 by the founding Wu matriarch — affectionately known throughout the city as A-Xia Po — the restaurant has operated continuously for more than eighty-five years, now in the hands of her grandchildren, from the same lane off Zhongyi Road where it began. The building has been renovated twice, never relocated.
The restaurant's signature dish — crab rice, served in a heavy clay pot with local blue swimming crab, shallots, Taiwanese long-grain rice, and a light reduction of crab stock and sesame oil — is the dish that Tainan cooks measure every other version against. The banquet menu runs to twenty-plus courses for groups of six or more, and the sequence is identifiable as Tainan: milkfish belly, Tainan-style shrimp rolls, braised pork knuckle, smoked goose, the crab rice, and a finishing bowl of peanut tofu that has not changed recipe in three generations.
The dining rooms are formal in the old Taiwanese sense — round banquet tables, lazy susans, an upstairs hall for larger parties and the lower floor for walk-in à la carte. Service is delivered by long-tenured staff, many of whom have worked at A-Xia for thirty or forty years, and the rhythm of a full banquet is paced with a specificity that feels closer to Kyoto than to Taipei.
A-Xia was included in the 2025 Michelin Guide Taiwan's main selection in the guide's first year covering Tainan, and the Bib Gourmand committee specifically recognised the restaurant's preservation of the Tainan banquet tradition. The family remains uninterested in opening a second location, and the restaurant's scale — three dining rooms, eighty-five years of reputation — is unlikely to change.
