Fleur de Sel is the Michelin-starred French restaurant that anchored Taichung's fine-dining claim years before JL Studio reached three stars. Chef Justine Li — a native Taichung cook who trained in France and at Paul Pairet's Ultraviolet in Shanghai — opened the room in 2014 in what was then an underused quarter of Wuri District, south of the city centre. The restaurant earned its Michelin star in 2020 and has retained it every year since, including in the 2025 guide.

Li's cooking is French in its technique but profoundly Taiwanese in its sourcing. Her suppliers are the smallholder farms of central Taiwan — the high-mountain vegetable growers of Qingjing, the Yilan duck farmers, the Toucheng oyster co-operatives — and her seasonal menu changes with unusual frequency, sometimes weekly for individual courses. A signature sequence pairs cold-cured Taiwan scallop with aged Hualien olive oil and briefly pickled pear; another transforms the local rib-eye into a ninety-minute sous-vide preparation served with salt-baked beetroot and dashi-butter sauce.

The dining room is one of Taichung's most intimate — fourteen tables arranged around a central open kitchen, concrete-and-wood finishes, the sound insulation calibrated so that even a full room remains conversational. Service is calibrated to the same standard; the sommelier programme, built around smaller French producers and an unusually deep representation of Taiwanese wines and sakes, is notably strong for a restaurant of this scale.

Li is the chef most commonly cited by Taiwanese food critics when asked who will hold two stars by 2028. Her kitchen discipline, her refusal to scale, and her insistence that Taiwan's ingredients deserve treatment on par with Normandy's have made the restaurant a quiet pilgrimage site for Hong Kong, Singapore, and Shanghai diners willing to fly to Taichung to eat at it.
