Nobody visits a ski resort expecting to eat their best Thai food of the year. And yet this is what happens with some regularity on North Washington Avenue in Ketchum, Idaho. Rickshaw occupies a room that is small enough to describe as intimate without overstating the case — four tables inside, a small seating bar for solo diners, outdoor dining with a ping pong table in the warmer months — and from this unconventional space, chef Andreas Heaphy produces what he calls "ethnic street foods": small plates drawn from the cuisines of Thailand, Korea, Sri Lanka, Vietnam, Malaysia, Japan, and China, executed with the technical precision of someone who has spent serious time understanding why each dish tastes the way it does.

The potstickers are the anchor of the menu — the dish that regulars cite first, that critics reach for as a shorthand for the kitchen's approach, that newcomers invariably order twice.
