Probka — "cork" in Russian — is the kind of wine restaurant that takes its name seriously. The cellar spans two hundred labels weighted toward Italian producers of character: Barolo, Barbaresco, Brunello at various vintages, alongside coastal whites from Campania and skin-contact bottles from Friuli that reflect the natural wine movement without being preachy about it. The team can guide a guest from first principles or accommodate the collector arriving with a specific region in mind.

The food is designed to work with wine rather than compete with it. Italian small plates in the charcuterie and cheese tradition: thin-sliced prosciutto from artisan producers, buffalo mozzarella when available and worth importing, a bruschetta programme built on proper bread and olive oil sourced directly. More substantial dishes — a pasta of the day, a piece of grilled fish, a slow-cooked lamb shoulder on weekends — arrive without ceremony and in portions calibrated for sharing.

The room is narrow and warm, with tiles and dark wood giving it a genuinely Italian sensibility. A long bar runs one side; tables fill the rest. The noise level settles into a comfortable hum that makes conversation easy even when the place is full. This is what a neighbourhood wine bar should be, and Saint Petersburg is fortunate to have it.
