About Collage Restaurant

Collage Restaurant sits at 60 Hypolita Street in the historic district of St. Augustine, a short walk from the old town's squares. It anchors part of our St. Augustine coverage as the city's most romantic fine-dining room.

Owners Mike Hyatt and Cindy Stangby took the space over in 2006 and renamed it Collage in 2007. With about fifteen tables, it is a small, owner-run dining room rather than a large restaurant.

The Kitchen

The menu is eclectic and global, built on fresh local seafood, steaks, lamb and veal, with most dishes original recipes the owners have developed over the years. Signatures include lobster ravioli and a rack of New Zealand lamb, alongside pan-seared diver scallops over potato puree.

Dessert closes on an espresso-soaked Belgian chocolate cake with cappuccino mousse and dulce de leche. Dinner is served seven nights a week from 5pm, with spend at the upper end for downtown St. Augustine.
