About La Speranzina
La Speranzina is the gastronomic restaurant of a small Relais property on Via Dante Alighieri — the lake-front road running directly opposite the 13th-century Scaligero castle — and holds one Michelin star under chef Fabrizio Molteni. The room sits on a glass-walled lake-front terrace with a 270-degree view of the castle and the surrounding Garda waters; the castle itself, illuminated at night, is reflected in the lake directly outside the dining room.
Molteni — a Lake Garda native, trained under the late Gualtiero Marchesi (the founder of modern Italian cuisine) at the original Marchesi Bonvesin in Milan — took the kitchen in 2010 and won the Michelin star in 2018. His cooking is contemporary Italian with deep regional sourcing through the Garda fishing fleet and the Apuan-coast extra-virgin olive oil producers. Signatures include a hand-rolled tortelli with Lake Garda lavarello (a regional whitefish) and Bardolino-wine-poached pumpkin; a slow-cooked Lake Garda pike with green tomato and basil oil; a wood-fired Adriatic turbot with samphire and Lake Garda lemon confit; the famous 'risotto al pesce persico' — a Lake Garda perch risotto that Molteni refined under Marchesi.
The wine list runs to 1,000 references with a serious Veronese spine — deep coverage of Amarone della Valpolicella (Quintarelli, Dal Forno, Tommaso Bussola), Bardolino, Lugana — and a respectable Italian-national section. Sommelier Maria Cristina Polletta runs the floor and the pairing flight at €130 is heavily Veronese-led.
The dining room and lake-front terrace together hold sixty-four covers — twenty-four in the indoor glass-walled dining room, forty on the lake-front terrace. The summer terrace is the most photographed dining setting on Lake Garda. Service is family-run — captains rotate from a year-round seasonal pool and the kitchen pacing is leisurely. The relais itself is fourteen rooms; most diners stay overnight which lets the kitchen run unhurried.
