The Verdict

The Bay by Chef Fei operates inside the Mandarin Oriental, Shenzhen, on the 5th floor with harbour-facing windows. The kitchen is led by Chef Fei, whose Jiang by Chef Fei at the Mandarin Oriental Guangzhou holds two Michelin stars and whose reputation has made his Shenzhen property the default corporate-banquet choice for Futian's financial district.

The dining room is classic Mandarin Oriental — soft lighting, hand-carved wood panels, harbour views along the window wall, private dining rooms behind latticed partitions. The register is corporate rather than intimate; the restaurant exists to host serious business and does so with the institutional polish that the Mandarin Oriental brand requires.

Chef Fei's cuisine is Lingnan and Teochew — the regional cuisines of Guangdong province — elevated with contemporary plating and technique. Signature courses include a Teochew marinated goose that is sliced tableside, a steamed fish with aged black bean that has become the restaurant's most-ordered dish, and a Lingnan double-boiled soup sequence that uses seasonal ingredients the kitchen sources from farms Fei maintains relationships with in his native Guangzhou.

The tasting menu runs RMB 1,388 for nine courses at dinner; a lunch equivalent at RMB 888 is an excellent value for power lunches. The wine list is Mandarin Oriental standard — strong Bordeaux representation, solid Burgundy depth, a handful of Chinese domestic wines that the sommelier will walk through if asked. The tea programme includes several rare Fujian oolongs that Chef Fei has imported through his Guangzhou networks.

Private dining rooms are the restaurant's strongest card. Four rooms seat from six to sixteen, each with its own service team and independent entry. For corporate hosting where the host wants to control every variable — service pacing, conversation privacy, menu sequencing, and the moment the check arrives — this is Shenzhen's most reliable room.
