The Verdict

Born & Bred opened in Mapo-gu in 2018 with a singular ambition: to take hanwoo — Korean grade-1++ beef, considered by many the finest beef in the world — out of the casual barbecue context that has dominated its presentation and into a fine-dining format that respects its quality. Master Park Soo-young — the fourth-generation cattle butcher who founded Born & Bred — sources whole animals from a single farm in Gangwon Province, dry-ages them in the restaurant's own facilities for between fifty and ninety days, and personally selects every cut that reaches a guest's table.

The format is unlike most beef restaurants. Each tasting menu opens with a tour of the dry-ageing room, followed by a series of small courses showcasing different cuts and preparations: a chilled tartare from the eye of round, a yukhoe from the upper sirloin, a slowly grilled short rib from a fifty-day-aged primal. The signature course is a tableside grilling of the chef's selection — typically a portion of marbled chuck eye and a portion of tenderloin from the same animal — finished over Korean charcoal at the table.

The wine programme is one of the most serious in any Korean restaurant, with a deep Bordeaux section and an unusual selection of Korean traditional alcohol — soju, makgeolli, and the rare baekseju that handles aged beef unusually well. The room is one of the most beautiful in Mapo, designed in restrained Korean modernist style with raw wood, brass, and ceramics from specific Korean kilns. From ₩200,000 the price is at the top of the Korean beef market, but for whole-animal-sourced, dry-aged hanwoo of this provenance, the value is defensible.
