About Yas Imagine Kaiseki

Chef Yas worked the Manhattan kaiseki circuit through the 2010s — Brushstroke, then a stint at Kajitsu — before returning to his hometown to open this twelve-seat counter on a quiet Ichibancho side street. The signage is in English and the playlist runs to early Miles Davis. Both choices feel deliberate.

The menu reads as kaiseki — eight courses, seasonal, ingredient-led — but cooks like a downtown New York tasting room. A March meal might open with hotaru-ika tempura over wakame ash, run through hassun in a black walnut box, then land on Sanriku oysters with yuzu-koshu beurre blanc and a wagyu donabe rice course finished with karasumi. The pairing flight pours equal parts Miyagi sake and Burgundy.

It's the only room in Sendai where you can sit alone and not feel watched. The counter format and the chef's near-fluent English make solo dining unusually easy here, and the lunch course (¥6,800) is one of the city's underpriced experiences. Dinner runs ¥18,000-22,000 depending on the season's ingredients.

The room itself is small, warm, and fundamentally comfortable — pale concrete walls, blackened steel fittings, a single line of low pendant lights along the counter. It is more relaxed than the formal kaiseki houses but still very much fine dining; the dress code is what you'd wear to a New York tasting menu.

A first date that signals taste without intimidation. The chef's openness, the counter format, the international playlist, the not-quite-formal pacing — all of it does the work for you. Solo travellers sit at the counter and watch the kitchen the way you'd watch a small jazz combo.
