The Room

Phillip Frankland Lee opened the Seattle Sushi by Scratch outpost on 14th Avenue in 2022 — the Michelin-starred Sushi by Scratch group's Pacific Northwest expansion. The format is intentionally classic-edomae: a hidden ten-seat hinoki counter, a chef's narration, the seasonal Toyosu fish supply.

Eater Seattle has held Sushi by Scratch on its top-omakase rankings since opening.

The Food

Seventeen courses across roughly two hours. The structure is classic edomae.

Sake programme runs in pairings. Service is the chef and one assistant.
