The Room
Shaker + Spear opened in 2015 — Carolynn Spence (a James Beard semifinalist) running a Pacific-seafood dining room inside the Palladian Hotel in Belltown. The format is intentionally hotel-restaurant-modern: a curving open-kitchen bar at the front, banquettes along the western wall, a raw-bar counter at the back of the dining room.
Eater Seattle has held Shaker + Spear on its top-twenty Belltown rankings since opening. The hotel-restaurant context handles a working-downtown business-traveler crowd through the week.
The Food
The raw-bar programme runs Pacific oysters, hamachi crudo, scallop ceviche. The hot-side kitchen runs the seasonal-rotating Pacific seafood — coho salmon, halibut, black cod — alongside a working steak programme. The brunch service handles a serious eggs-and-Champagne weekend programme.
Wine programme is Pacific Northwest-led with a small French bench. Cocktail bench runs Carolynn Spence's classic-cocktail house book. Service is informed and warm.

First Date: The raw-bar counter at Shaker + Spear is one of Belltown's most-reliable first-date seats. The oyster programme is the natural opener, the cocktail programme is the second move, the open-kitchen view does the conversational work.
