The Room
Jamie Boudreau opened Canon on 12th Avenue in 2011 — the cocktail temple that established Seattle's modern-cocktail conversation. Fourteen years later Canon is one of America's most-considered classic-cocktail destinations, with a 4,000-bottle spirit programme and a James Beard Outstanding Bar Program nomination.
The dining room is intentionally cinematic: dark-wood paneling, leather banquettes, a serious whisky-vault visible from the bar.
