In September 2024, The Ritz-Carlton Sarasota unveiled Rufa — an al fresco dining and lounge experience designed around a single fundamental luxury: the view. Every one of the 64 seats on the terrace faces Sarasota Bay, and the design team has arranged them so that the sunset is not a backdrop but the main event. There is an elevated bar with the property's most unobstructed vistas. There is a ground-level seating area decorated in warm sage, yellow, and pink tones that seem chosen to harmonise with what happens to the sky every evening between 7 and 8pm from October through May.

The dining concept is Baja California-inspired — the coastal cuisine of Mexico's Pacific peninsula translated into the shareable, interactive format that the Ritz's outdoor setting demands. Smoked avocado guacamole made tableside. Beef tenderloin tacos with roasted corn salsa and Chihuahua cheese wrapped in flour tortillas. Grilled octopus built on a bright tomato base with Mexican chorizo and a chipotle sauce that provides heat without obscuring the char. These are dishes designed for the table to build together — plates passed, impressions shared, the act of eating as social rather than solitary.

The drinks programme is one of Sarasota's most serious tequila and mezcal lists, which is the right spirit for a concept that draws from the same culinary tradition. The imaginative cocktail menu applies Ritz-calibre technique to approachable Baja flavours. Wine selection skews towards Spanish and South American bottles that complement the kitchen's register.

Rufa operates Wednesday through Sunday from 4pm, which makes it the natural first act for any dinner involving a sunset — arrive early, claim a bay-facing seat, order the first round, and let the sky do its work before the kitchen does its own. Happy hour runs Wednesday through Friday from 4 to 6pm with select signature libations.
