The Room

La Tambouille opened on Avenida 9 de Julho in 1992, in a converted Itaim mansion that Giancarlo Bolla and his late father built into one of São Paulo's most discreetly powerful business dining rooms. Three decades on, the room remains the address São Paulo's old-money business set books when the deal needs the room to do work without saying anything. Eighty seats spread across three intimate dining rooms, plus a small private room that holds twelve and is the most-requested seat for closing dinners.

The interior is studied old-São-Paulo. Cream walls, dark wood panelling, framed nineteenth-century French and Italian etchings, lighting that holds the room at the level of a long conversation. The captains have been here for decades — most have worked the room since the early 2000s, and several are second-generation Tambouille employees. The wine cellar, visible through a glass wall in the main dining room, holds about eight thousand bottles.

La Tambouille has been on critics' top-ten São Paulo lists since 1995. The Michelin guide has recommended the room every year since arriving in Brazil. The booking window for weekday lunch holds at two weeks; weekend dinner can stretch to three. The address is one of the most quietly powerful dinners in São Paulo — and the regulars prefer that the broader market never quite catches up with how good the kitchen is.

The Food

The kitchen runs Italian classical with French technique — the line Giancarlo Bolla learned from his Tuscan mother and refined in Lyon and Paris in the 1980s. The signature lobster ravioli with truffle butter is the order to make on a first visit and one of the city's longest-running flagship dishes. The risotto al funghi porcini, the osso buco alla milanese, and the Dover sole filleted tableside are the three other dishes that account for most of the kitchen's output.

Antipasti lean classical — a serious vitello tonnato, a competent foie gras with brioche, the obligatory burrata in season. Secondi include a respectable rack of lamb, a steak Diane prepared tableside, and the Friday-only bouillabaisse that the kitchen has prepared from the same recipe since 1994. Desserts are restrained — a tarte tatin that requires forty minutes, a tiramisù that any Italian grandmother would recognise, and a chocolate fondant that arrives with vanilla gelato made in-house.

Wine programme is Italian and French-led with a serious Piedmont, Tuscany, Burgundy and Bordeaux bench. Half-bottles are plentiful, and the by-the-glass programme rotates weekly. Service is brigade-formal but warm — captains who remember regulars' wine from years earlier, sommeliers who suggest rather than insist, and a kitchen that sends an amuse and a small dessert without being asked.
