The Room

La Mar opened in Itaim Bibi in 2014 — Gastón Acurio's first Brazilian outpost of the cebicheria he built into a global Peruvian-fine-dining brand from the original 2005 Lima room. The São Paulo address sits on Tabapuã in a converted Itaim ground-floor space, with a long open kitchen, a marble cebiche bar at the entrance, and a hundred and twenty seats across the main dining room and a side terrace.

The interior is Acurio house style — pale wood, ocean-blue accents, framed photographs of the Peruvian coast, candle lamps on every table, and the open cebiche bar where the cebicheros prepare each plate to order in front of the diner. The terrace at the side, under a covered awning, holds another thirty seats and is the seat to request for weekday lunch.

La Mar draws a wide crowd — Itaim professionals at lunch, the Pinheiros food crowd at dinner, the occasional Peruvian diaspora regular, and a steady international tourist set that recognises the Acurio brand. The booking window for weekend dinner holds at two weeks. The weekday lunch service is the most efficient mid-range Peruvian lunch in São Paulo.

The Food

The kitchen runs the Acurio cebicheria playbook at full Lima discipline. The signature cebiche clásico — corvina cured in tiger's milk with red onion, ají limo and Peruvian corn — is the order to make on a first visit. The cebiche nikkei (with soy and ginger), the tiradito al ají amarillo, and the leche de tigre shot at the cebiche bar are the three other plates that account for most of the kitchen's cebiche output.

Beyond cebiche, the kitchen runs a serious hot programme — the lomo saltado, the seco de cordero, the arroz con mariscos, and the obligatory anticuchos prepared at the back grill. The pisco sour programme is one of the most disciplined in São Paulo — six variations on the classic plus a small seasonal programme that rotates with the kitchen's cebiche calendar. Desserts lean Peruvian — a serious suspiro a la limeña, a competent crema volteada, the obligatory tres leches.

Wine list is Latin-America-led with serious Argentine and Chilean benches, a small Peruvian wine programme that exists for completeness, and a usable French upper register. The pisco programme — over thirty references — is the order to take with the cebiche course. Service is brigade-warm — captains who walk first-time diners through the cebiche programme with the patience the form requires.

Best Occasion Fit

First Date: The cebiche bar at La Mar on a Friday evening is one of the most distinctive first-date settings in Itaim — the cebicheros working the bar in front of the diner, the pisco sour programme, the leche de tigre shot at the start. The bill is plausible at R$220 a head.

Impress Clients: International visitors recognise the Acurio brand without translation, and Peruvian fine dining communicates the city's ambition the way Lima's cebicheries communicate Peru's. The full menu with pisco and wine pairings is one of the city's most distinctive dinners.

Team Dinner: The side terrace at La Mar holds parties of ten to thirty without losing the cebicheria warmth. The set menu at R$240 walks the team through cebiche, an hot course and dessert with a pisco welcome. The room handles team dinners with the warmth Peruvian dining is supposed to carry.
