Sphinx has occupied the same restored 19th-century mansion in central Fira since 1991, and in a town that reinvents its restaurant scene every summer, that kind of tenure is a statement. The building itself — a captain's house opening onto a spacious stone terrace directly above the caldera — is as much of the draw as the kitchen. Look one way and you see the old port of Fira and the volcanic islands beyond; look the other and you see four decades of careful restoration work, candles set in recessed alcoves, and the kind of quiet intentionality that the rest of Fira has forgotten.

The menu is Mediterranean with a refined Greek accent. Breads and pastas are made in-house daily, and a significant portion of the fruit, vegetables and olive oil arrives from the restaurant's own farm elsewhere on Santorini — a rare claim on the caldera, where most tables work with the same restricted supply chain. The kitchen's signatures include village-style tomato and herb pasta with local cherry tomatoes, spearmint and feta; shrimp giouvetsi with homemade orzo; risotto with wild mushrooms and mascarpone; and linguine with lobster in a white-wine and Santorinian cherry tomato sauce that locals consider one of the definitive dishes on the island.

The carnivore menu is equally considered. Montana black Angus rib-eye with truffle butter and a duck breast with Frangelico and apricot sauce are the kitchen's showpiece plates — both are cooked on a charcoal grill that sits at the heart of the open kitchen. Fish arrives daily from Vlychada and is typically presented simply: swordfish with mussels, tomato, garlic and white wine is the version you want.

The wine list is deep on Assyrtiko and Vinsanto but stretches confidently into Italian and French territory when the dish demands it. Service is the kind of attentive-but-unhurried that only happens when the same team has been running the floor for a decade or more. Expect a main course to land in the €34–€58 range; a full dinner with wine will typically settle between €110 and €160 per person. The typical Fira terrace is loud, fast, and optimised for a sunset Instagram — the worst possible environment for the conversation that precedes signing anything. Sphinx is the opposite case. The tables are spaced generously, the acoustics are soft, and the service is trained to disappear between courses. You can hold a 20-minute discussion on terms without the waiter circling twice. The room is serious enough to signal that the occasion matters, and relaxed enough that your counterpart settles rather than postures. Order the risotto with wild mushrooms and mascarpone — it is the single most ordered dish on the menu and the one that every regular returns for. The linguine with lobster is the table's best-value luxury plate. If you are with a steak person, the Montana rib-eye is the correct answer; if you are not, the duck breast is the quietly ambitious choice. For the opening, the village-style tomato and feta salad with the restaurant's own tomatoes is one of the best expressions of that dish anywhere in Santorini.
