Plumed Horse

Plumed Horse sits on Big Basin Way in the small, oak-shaded village of Saratoga — a twenty-five minute drive from downtown San Jose that feels twice that long because you've left Silicon Valley behind somewhere around the second curve. The current incarnation opened in 2007, though the address has been home to a restaurant of the same name since 1952. Under chef Peter Armellino, it has held a Michelin star every year since 2009 — seventeen consecutive years of recognition that mark it as one of the Bay Area's great dining constants.

The kitchen works in the contemporary Californian idiom: sustainably sourced fish and shellfish, local organic produce, and technique that owes as much to France as to the farmers' market a few blocks away. The chef's tasting menu runs eight courses at $158 (a vegetarian version is $135, and an à la carte menu is also offered). What you come for is the black pepper and parmesan soufflé — served with uni and blue crab fondue — a dish that has become the restaurant's defining signature and the thing guests return for specifically.
