Rare Society is chef-restaurateur Brad Wise's take on the retro American steakhouse, at 4130 Park Boulevard in San Diego's University Heights. Wise's Trust Restaurant Group opened it in late 2019, and it has since spread to other West Coast cities from this original.

The format is the hook: instead of one slab per person, steaks arrive as shareable boards of sliced cuts — bullseye ribeye, Wagyu strip, tri-tip, New York strip — set beside ramekins of sauces to pass around the table. Steaks start at $31 and wine from about $11 a glass, so a table can eat for $80 or push past $200 a head.
