Doug and Lori opened Dough Pizzeria Napoletana on Blanco Road in November 2007 after a pilgrimage to Naples — and the L'Associazione Vera Pizza Napoletana certificate they earned makes Dough the only San Antonio pizzeria with VPN credentials on the wall. Two wood-burning ovens — affectionately named Il Cuore and Scintilla — were shipped from Italy and bake pizzas in roughly ninety seconds at over 900°F. They have since added a Hemisfair location near the convention center and a Goldbelly nationwide-shipping arm.
What to Expect from the Kitchen
The menu is short on purpose: a dozen-plus pizzas (Margherita, Marinara, Bianca, Funghi, Quattro Stagioni), a section of antipasti that prominently features the house-made mozzarella and burrata that Yelp reviewers list first, salads built on dressing the kitchen makes from scratch, and a small group of pastas that respect the meaning of al dente.
