Cullum's Attaboy

More Paris bistro than San Antonio diner. Christopher Cullum's brunch counter where the omelettes get truffle, the burger comes with a 1977 Airstream backstory, and James Beard finally noticed.

Christopher Cullum is a self-taught chef and 2024 James Beard finalist whose Tobin Hill counter — open kitchen, bentwood-style seating, breakfast and dinner service — has become San Antonio's most quietly serious restaurant. The Michelin Guide gave it a 2025 Bib Gourmand. Texas Monthly called it 'more Paris bistro than San Antonio diner'. The Express News gave it three stars. The press lined up. The room still seats fewer than thirty.

What to Expect from the Kitchen

The brunch menu reads as if a New York chef was given a French uncle's cookbook and told to keep the prices honest: a classic French omelette finished with hollandaise and an option to add caviar or shaved truffle; a brisket eggs benedict on a house-cured pastrami brisket and a homemade English muffin; the Attaboy Burger that traces back to Cullum's 1977 Airstream 'Land Yacht' from 2010; baked tomato French toast with Gruyère; spudnuts (a 1915 archive recipe — gnocchi-doughnut hybrids) coated in powdered sugar. Brunch mains run $12 to $32.

Dinner service runs Wednesday to Saturday from 5pm and adds a Champagne butter-poached scallop, market-catch meunière, and a duck bigarade. The wine list is tightly French-leaning with thoughtful Bordeaux blancs and pet-nats; champagnes by the glass are routinely the best deal on the menu.

Who It's For

Attaboy suits the brunch loyalist who has decided to eat at one place forever, the visiting business contact who wants the most San Antonio meal you can give them, the first date that wants conversation-friendly volume, and the solo diner with a book and a coffee at the counter. The room handles birthdays with a candle and a quiet 'happy birthday' rather than a production.
