The kitchen produces the Senegalese-French hybrid that characterises Saly's best restaurants. The thiéboudjeun is made with fresh Atlantic fish — barracuda, grouper, or the day's catch — in the traditional broken-rice preparation. The French influences appear in the sauces and the wine programme rather than in any displacement of Senegalese technique.
The grilled barracuda with garlic butter and attiéké is the kitchen's most straightforward and most satisfying preparation. The barracuda from the Petite Côte waters is exceptional — firm, flavourful, and arriving at the kitchen within hours of leaving the sea.
