The result is food that is recognisably Mediterranean in spirit but genuinely specific to its place and time, which is a considerably more difficult trick than it sounds.

Small plates are the grammar here. The watermelon steak has become something of a signature — grilled, seasoned, and served with components that turn a summer ingredient into a focused culinary statement. The scallops arrive with accompaniments that shift with the season. The spreads and dips that open a meal come with bread that is made in-house and served warm. Order more than you think you need; the pacing rewards a generous approach to the table.

The Room and the Granary District

Manoli's sits in the Granary District — SLC's most interesting neighbourhood for food, a cluster of independent restaurants and bars in former industrial buildings south of downtown. The restaurant's interior reflects its environment: considered, unfussy, and more interesting than the neighbourhood's surface appearance would suggest. Weekend brunch — Saturday and Sunday from 10am to 2:30pm — has developed a loyal following, and it is worth noting that Manoli's does not do brunch as an afterthought. The Greek approach to morning food translates naturally: eggs with herbs, yogurt with honey, grilled bread with quality olive oil. The cocktail programme at brunch is led by Greek spirits and Mediterranean-influenced builds.

Small plates and a genuine culture of sharing make Manoli's structurally suited to the dynamics of a team dinner. There is no pressure to order correctly or to navigate a formal menu — the food comes as it comes, shared across the table, and the conversation follows naturally. The price point means a team can eat and drink well without an expense report that requires explaining. Compare this to the private-room formality of Urban Hill for a different register of business dining; Manoli's is the table where the team actually relaxes.

For birthday groups of four to ten, the sharing format works particularly well: no one needs to decide between the lamb and the fish when both are arriving at the table. The kitchen accommodates dietary restrictions with more flexibility than a fixed-menu operation typically can.
