Dasheene is the institutional dining room of Ladera Resort — the open-air luxury resort perched at 335 metres on a ridge directly between the Pitons, with a 270-degree view of the volcanic-twin-peaks-and-Caribbean-Sea panorama — and is one of Saint Lucia's most photographed view-driven dining settings. The Ladera property's signature 'open wall' architecture (one wall of every guest suite is open to the elements) extends to the dining room, with a direct face-on view of the Pitons.
The cuisine is contemporary Caribbean-Creole. Dasheene overlooks the majestic Piton Mountains and offers breathtaking views along with an exquisite menu of Caribbean and Creole-style cuisine, known for its fresh seafood, jerk chicken, and local produce prepared with a modern twist. Signatures include the famous 'fresh local jerk chicken' served with Saint-Lucian seasonings; a Caribbean-lobster cocktail; a wood-fired Caribbean snapper; a hand-cut Caribbean tuna tartare; the famous 'tropical fruit pavlova' for the dessert course.
The wine list runs to 400 references with deep French Champagne and Burgundy coverage.
