About Wine Vault
Wine Vault is the signature restaurant of Hotel Monte Mulini, tucked into the forested edge of Punta Corrente with a terrace that catches the late sun over the Adriatic. The cellar — visible from the dining room through glass — holds more than a thousand bottles, and the wine programme is the reason most serious drinkers come to Rovinj specifically.
Chef Tom Bašić cooks modern European with a careful Istrian bias. The tasting menu might run from Adriatic tuna crudo with blood orange and olive oil, through hand-rolled fuži with wild asparagus, to dry-aged Boškarin beef with beetroot and an espresso jus. Desserts lean toward olive oil, chocolate and citrus. The à la carte is short but well judged; the tasting is the right move.
The wine list is the real event. Sommelier Ivana Glavan runs an unusually deep Istrian and Friulian cellar, with serious spines of Burgundy, Piedmont and the Rhône, and a fast-growing section of Croatian producers from the continent. Pairings are considered and confident; the programme handles allergen and preference requests without fuss.
The terrace is the Wine Vault's signature asset. In summer it holds forty, separated enough that tables do not overhear one another; in cooler months the dining room glasses up and the fireplace does most of the atmospheric work. Service is European-formal but never stiff, and the team knows its cellar well enough that the sommelier's recommendation is usually the correct order.
Why It's Perfect for Close a Deal
Wine Vault is a close-a-deal room. The cellar does the conversational heavy lifting; the terrace's acoustics favour private discussion; the pacing of a six-course tasting gives a working table two and a half hours to land whatever it needs to land. If the point of the dinner is to get a serious wine programme in front of a wine-literate guest and agree terms over a second bottle, this is the Rovinj answer.
