About Glass Hostaria

Cristina Bowerman left Puglia with a law degree, spent a decade cooking through Austin and San Francisco, and came back to plant a glass and steel dining room in the middle of medieval Trastevere, in what was once a carriage workshop on Vicolo del Cinque. The neighbors said the modern room would never last. The Michelin star arrived in 2010 and the 2026 guide has just reconfirmed it, making her still the only woman running a starred kitchen in the capital.

The cooking lets Lazio surface through a creative register that borrows from Asia and Latin America without ever reading as fusion theatre. The tasting menu runs €130 with a fully developed vegetarian version alongside, and a compact à la carte survives for diners who want two courses and a bottle rather than a program. Sourcing runs through trusted and sustainable suppliers with a stated waste reduction discipline, the kind of kitchen ethics the guide now watches as closely as the plates.

The room is the argument made visible: skylights and clean lines dropped into a quarter of ochre walls and cobblestones, ten minutes on foot from Piazza Trilussa. Seats release on OpenTable, which makes this one of the easiest serious tables in Rome to actually secure, and the bill lands well under the city's other starred rooms. Trastevere roars outside until late; the acoustics inside stay civilized, an engineering feat locals no longer notice.

The Room

A double height modern space of pale wood, steel and dramatic lighting threaded into a medieval block, with sightlines that make small tables feel private. The contrast walking in from the cobblestones is the point. Dress is smart casual and genuinely flexible; this is the starred room where sneakers pass. Sound stays warm rather than loud even when Trastevere outside is at full volume.

Why book it, occasion by occasion

Not every star fits every plan. These are the plans Glass Hostaria was built to carry.

First Date

For a first date with proof of taste

Glass hands you the full first date arc: an aperitivo walk through Trastevere, a starred dinner at €130 that will not humiliate anyone's card, and the whole neighborhood open afterward. The à la carte lets you read the table and keep it to two courses if the spark needs air, or stretch to the tasting if it is working. Ask for one of the mezzanine tables; they watch the room without being watched.

Solo Dining

For the solo diner who wants energy, not silence

Most starred rooms treat a party of one as a logistics problem. Glass seats you in the middle of the theatre, where the modern room and the Trastevere crowd give a solo meal momentum. The vegetarian tasting is a genuine alternative rather than a penalty menu, and OpenTable makes the same day booking a realistic move when a Rome evening opens up unexpectedly.

Birthday

For a birthday that wants buzz over ceremony

A birthday at Glass trades white glove hush for a room with pulse and a quarter that keeps the night going after the dolce. The €130 tasting keeps a table of four's bill in three figures each, rare at star level in this city. Flag the birthday when booking; the kitchen marks the dessert. Then let Trastevere handle the after party thirty steps from the door.

What to order

One tasting, one vegetarian mirror and a real à la carte: the calls are format and floor position.

  1. The full Glass tasting

€130 for the complete Bowerman argument, Lazio through Austin and back. First visit, this is the order; it is also the cheapest starred tasting of consequence in Rome.

  2. The vegetarian tasting

Not a fallback but a parallel menu with its own logic. Order it by preference, not necessity, and it may outpoint the main line.

  3. The pasta courses

Where the creative register meets Roman muscle memory hardest. If ordering à la carte, build around them.

  4. A mezzanine table

Request it on the booking note. The upper level watches the double height room and holds the best conversations in the house.

Not for: seekers of classic Roman trattoria cooking or hushed formality. The register is creative, the room is modern, and Trastevere hums outside.

Questions diners ask

Is Glass Hostaria worth it?

Yes, especially on value. A €130 tasting from Rome's only starred woman chef undercuts every comparable room in the city, and the Trastevere setting adds an evening around the meal that hotel dining rooms cannot. The Value score of seven is the highest honest number among Rome's starred tables.

How hard is it to book Glass Hostaria?

The easiest booking among Rome's starred rooms. Seats release on OpenTable and midweek tables often show availability the same week, with weekends needing a few days of lead. The room is not large, so parties of five or more should write to the restaurant instead of stacking platform bookings.

What is the dress code at Glass Hostaria?

Smart casual without enforcement. The modern room and Trastevere setting keep things relaxed, and neat sneakers pass without a glance. Dress for the neighborhood walk as much as the table; cobblestones and an aperitivo stop are part of the correct evening here.

What does dinner at Glass Hostaria cost?

The tasting menu runs €130 per person with a vegetarian version at the same level, before wine. À la carte diners can land around €90 to €110 with a glass or two. All in with a pairing, plan roughly €180 to €200 a head, well under Rome's other starred tables.
