Leaf arrived in Prague with a mission that could have read as virtue signalling but landed instead as genuine commitment: a restaurant where zero-waste cooking, seasonal sourcing, and environmental accountability are not marketing positions but kitchen disciplines. The Michelin Green Star awarded in 2025 confirmed what the restaurant's loyal following had already understood — Leaf is one of Prague's most exciting dining addresses, full stop, irrespective of its sustainability credentials.

Chef Jiří Štift works with a network of biodynamic farms within eighty kilometres of Prague, receiving produce deliveries three times per week and redesigning the menu around each delivery. What arrives from the farm determines what the kitchen makes — not the other way around. The practice produces menus of unusual coherence: everything on the plate belongs to the same moment of the calendar.

A late spring menu might open with a consommé of Prague market vegetables with herb oil and nasturtium flowers, progress through a tart of wild garlic and Bohemian sheep's cheese, build to a centrepiece of roasted whole cauliflower with miso and hazelnut, and conclude with a dessert of rhubarb, elderflower cream, and bee pollen from hives kept on the restaurant's rooftop. Nothing arrives from a can, nothing is imported unnecessarily, nothing is wasted.

The room matches the philosophy: repurposed Czech oak, linen from a Moravian mill, ceramics from a local studio. Natural light floods the space during lunch service; in the evening, candlelight and low-wattage lamps create an atmosphere of focused intimacy. The natural wine list — heavy in Moravian and Austrian bottles — is curated with the same rigor as the menu.
