Osteria dei Cavalieri occupies a 14th-century stone building on Via San Frediano, sixty seconds from Piazza dei Cavalieri — the central square of medieval Pisa with the Scuola Normale Superiore on one side and Palazzo della Carovana on the other. The dining room is two interconnected vaulted-stone rooms with terracotta floors, candle-lit tables, and a small kitchen visible through an archway. The wine list is the deepest in central Pisa — over six hundred selections, with a serious Bolgheri programme (Sassicaia and Ornellaia verticals running back to the 1990s), a Chianti Classico section, and a Vermentino row from the coast.
