About Plénitude

When Cheval Blanc Paris opened above La Samaritaine in 2021, Arnaud Donckele arrived holding three stars from La Vague d'Or in Saint Tropez, and Michelin gave Plénitude its own three within seven months, one of the fastest ascents the French guide has ever recorded. The 2026 guide holds the line. The dining room sits on the first floor at 8 quai du Louvre, windows onto the Seine and the Pont Neuf, inside the LVMH group's flagship hotel.

Donckele's thesis is that sauce is the soul of French cooking, and the service is built to prove it: sauces arrive in their own vessels, and guests are invited to taste each one on its own before the dish it accompanies. The compositions carry names and dedications like perfumes, and the kitchen treats broths, vinaigrettes and emulsions as the main event rather than the supporting cast. What surprises first timers is the warmth.
