The Verdict

The Beach Club is the signature dining room of Amanpulo, the Aman Resorts property on Pamalican Island that has operated since 1993 as the Aman group's Philippines flagship. The restaurant is located on the island's main beach, in a thatch-roofed pavilion that extends onto the sand at its forward edge, with open-air dining room seating that faces the water and the sunset. The kitchen is the resort's highest-register kitchen, run by a Manila-trained chef who has previously worked at Aman properties elsewhere in Asia.

The menu is a Mediterranean-and-Filipino programme — the Mediterranean side anchored on the imported Spanish and Italian produce that the Aman supply chain brings in weekly, the Filipino side anchored on the regional Palawan seafood (the Sulu Sea lobster, the local tuna, the day-boat fish) and the Filipino vegetable-and-starch sides (the kamote, the saluyot, the local rice varieties). The signature dishes include a grilled Palawan lobster preparation with a saffron risotto, an adobo-inspired braised-pork-belly course with a heirloom-tomato salad, and a kinilaw (the local ceviche) preparation that uses the morning catch.

The dining room seats approximately 60 across the thatched pavilion, with an additional 30 seats at the sand-level dining area that extends beyond the pavilion onto the beach itself. The sand-level dining is the most photographically distinctive and is the preferred setting for anniversary, proposal, and honeymoon dinners — the pavilion is configured for more group-oriented dining. The wine list is the most serious in Palawan — a European-focused selection with serious French and Italian anchors, curated by the Aman group's central cellar programme.

Service is Aman-standard — the highest level of hotel service available in the Philippines, with a staff-to-guest ratio that exceeds the 3:1 mark, and a pace that is deliberately slow to support the resort's overall register. Reservations at the Beach Club are included in the resort-stay programme for Amanpulo guests; non-resort-guest reservations are not generally accepted. Access to Amanpulo requires the resort's charter-flight programme from Manila (60 minutes).
