About Criollo

Criollo is the Oaxaca project of chefs Enrique Olvera (the celebrated chef of Pujol Mexico City, named No. 1 in Latin America's 50 Best Restaurants) and Luis Arellano (an Oaxacan-born chef and Olvera's longtime collaborator) — opened in 2017 in a converted 17th-century colonial garden on Calle Madero in the Jalatlaco neighbourhood. The restaurant occupies a series of garden pavilions arranged around a central tropical courtyard, with thirty covers across two rooms.

The cuisine is contemporary Zapotec — Olvera's Pujol-cousin cooking adapted entirely to the Oaxacan regional larder. The seven-course tasting menu rewrites daily; signatures rotate but always include snacks (botanas) showcasing the Tlacolula-market produce, a salad course, the catch of the day from the Pacific-Mexican coast, the Oaxacan mole tasting (typically two of the seven canonical moles), and a dessert course built around Mexican-Pacific cacao.

The wine list runs to 250 references with deep Mexican Valle de Guadalupe coverage and a tightly chosen French section. The mezcal programme is the most curated in the city — Arellano personally selects the bottlings from twenty-plus Oaxacan distilleries.

The garden is the experience — a 17th-century colonial tropical courtyard with hand-painted Oaxacan-folk-art panels, exposed colonial-stone walls, and thirty covers arranged in small private clusters. Service is family-run.
