About Kitchen by Kamimura
Kitchen is the most recent project of Yuichi Kamimura, the chef behind the original Kamimura restaurant that held a Michelin star in Niseko for over a decade. The room sits at street level inside Shiki Niseko in Hirafu, with floor-to-ceiling windows facing the Mount Annupuri ridgeline and a quietly modern design that lets the view do the work.
The menu is contemporary — French technique, Japanese discipline, Hokkaido produce — served as a fixed-course tasting that changes with the season. Winter brings hairy crab, scallops, Biei snow beef and the foraged mountain vegetables that Hokkaido is celebrated for. The cooking is precise rather than showy: every plate has been tasted into its current form and abandoned only when something measurably better arrived.
Service is adults-only, which is unusual in family-oriented Niseko and makes the room a destination for couples and small business groups specifically. The wine programme leans heavily into Burgundy and Hokkaido, with Kamimura's own selections poured by glass.
The chef's table at Kamimura that closed several years ago is widely missed; Kitchen is its successor in spirit, run with the same standards but with a more restrained, contemporary register. The combination of view, food and quiet alpine atmosphere produces some of the best date dinners in northern Japan.
