About Carbone

A captain in a burgundy tuxedo rolls a cart to your table, builds a Caesar alla ZZ from anchovy up, and the whole room smells briefly of garlic and celebration. That is Carbone working as designed. Mario Carbone and Rich Torrisi opened the room at 181 Thompson Street in 2013 as a maximalist tribute to the mid century Italian American restaurants of the neighborhood, and thirteen years on the performance has not dropped a beat.

The menu is a la carte and gleefully rich: the spicy rigatoni alla vodka that launched a thousand imitations, a veal parmesan the size of a serving tray, lobster fra diavolo, tortellini al ragu. The Resy average runs about $150 a head before wine, and deposits of $50 per person at dinner keep the speculators honest. Order less than you want to; the portions are calibrated for sharing and the free garlic bread ambushes everyone.

Be clear about what this is. Michelin stripped Carbone's star in the 2022 guide in the same sweep that hit Marea and Peter Luger, and it has not returned. Demand never noticed. Tables release on Resy thirty days out at 10am Eastern and the best of them are gone in under a minute, which makes this unstarred red sauce room a harder booking than most of the city's starred tasting counters.

The Room

Dim, loud in the best way, and dressed like a film set: tile floors, wine crates, a soundtrack of sixties soul turned up past polite. Captains run the show tableside and the energy peaks around nine. Dress up a little; the room does. Lunch is the same theatre at lower volume and is meaningfully easier to book.

Carbone is built for the table that wants to celebrate out loud. Book the largest table your group fills, order the veal parmesan as the centerpiece, and let the room do the rest.

First Date

For a first date with built in momentum

The room hands you everything a first date needs: noise cover for nervous minutes, theatre to point at when conversation stalls, and food made for sharing so the table stays interactive. Take the 10am Resy scramble seriously and book the earlier seating, which is easier to win and leaves the rest of the evening open if it goes well. Split the rigatoni; it is the icebreaker it is rumored to be.
