This is a vast territory with a cooking tradition as old as the Silk Road, and the kitchen at Loya has spent years mapping it: the slow-cooked preparations of Kashmiri haakh and rogan josh, the tandoor traditions of Punjab at their most elevated, the mountain herb flatbreads of Himachal that most Delhi restaurants have never attempted.

ITC Maurya is itself among India's most prestigious hotel addresses — the preferred base of visiting heads of state and the location of Bukhara, the legendary dal makhani restaurant on the same property.
