The Verdict

Pin Ning Fu is a one-Michelin-starred modern Jiangsu restaurant in the Jianye District, close to the Jinling Lake. The restaurant was opened in 2020 and received its Michelin star in the 2024 guide. The chef is a Nanjing native who had previously worked at the city's five-star hotel kitchens before opening Pin Ning Fu as his own project, and the restaurant's specific identity is a refined version of the classical Jiangsu canon rather than the boundary-pushing modernism of some of its Michelin-starred peers.

The menu is tasting-only — an eight-course degustation that leans on the classical Jiangsu ingredients (freshwater fish and shellfish, pressed duck, salt duck, slow-braised red-braised preparations) rendered at fine-dining technical standards. The signature dish is the pressed-duck preparation served in two courses: the duck itself, pressed and served with a salted-plum glaze, and a separate consommé made from the pressing stock that arrives as the second course. The autumn menu features the Lake Taihu hairy crabs; the spring menu features the Yangtze River freshwater prawns.

The dining room is designed around lake-view window seating and four private dining rooms that each hold six to eight covers. The private rooms are the preferred setting for couples — the windows open toward the Jinling Lake with Purple Mountain visible beyond, and the table service is configured for a slower, more intimate pace than the main hall. The wine list is French and Italian heavy, and the Baijiu programme is serious.
