Papa's is an eight-seat chef's counter above Bombay Canteen in Bandra — one sitting per night, one tasting menu, one chef. Hussain Shahzad emerged as the executive chef of the Hunger Inc. group (Bombay Canteen, O Pedro, Veronica's) and Papa's is his solo statement: a personal, intentionally limited project where he cooks every course himself in front of his eight guests. The reservation has been the most coveted in Mumbai since opening and the booking window stretches months ahead.
The cuisine is described as modern Asian — Shahzad trained at Eleven Madison Park in New York and the technical rigour is unmistakable — but the framework is more autobiographical than that. Papa's is named for the chef's father, and many of the courses draw on Shahzad's Lucknowi Muslim heritage filtered through European technique. A signature course might be a hand-rolled dumpling filled with slow-braised goat, finished with a yoghurt foam and a chilli oil cured for a fortnight. Another might be a single piece of seafood from the Konkan coast, treated with the precision of a Tokyo sushi-ya.
The format — eight seats, one chef, the chef cooking everything — produces an experience that has more in common with a high-end Tokyo or New York counter than with most Indian fine dining. The wine and beverage pairing is one of the most thoughtful in Mumbai, with a serious focus on Indian craft spirits and small-production European wines. From ₹7,500 the price is at the top of the Mumbai market but for a chef's counter experience of this calibre, the value is defensible.
