About Dry Milano

Dry Milano occupies a peculiar and successful position in Milan's dining landscape: it is neither a traditional pizzeria nor a fine dining restaurant, but something that Milan has claimed as its own — the aperitivo-into-dinner experience elevated to an art form. The Brera location, in one of the city's most fashionable neighbourhoods, is the original and still the best of the group's two sites.

The pizza is Neapolitan in method — long-fermented dough, Fior di Latte, San Marzano — but Milanese in philosophy, meaning that restraint and balance take precedence over excess. The margherita is a benchmark: the simplest test of whether a pizzaiolo understands dough, sauce, and cheese in correct proportion. Here it passes. The more inventive toppings — guanciale with truffle honey, wild mushroom with Stracciatella and pine nut — are additions rather than distractions.

The cocktail programme, developed by co-owner Lorenzo Antinori, is what distinguishes Dry from every other upscale pizzeria in Italy. The Negroni variations alone span a full page of the drinks menu; the house Spritz uses a bespoke Aperol alternative produced in Piedmont. The bar opens at 6pm; pre-dinner cocktails on the terrace in summer are one of Milan's essential warm-weather rituals.

For group birthdays, the format works particularly well: the pizza lends itself to sharing, the drinks arrive continuously, the staff are trained to pace an evening rather than turn a table, and the neighbourhood energy of Brera keeps arriving through the open windows.
