Papprika makes the case for Persian cuisine in precisely the right way: by being exceptionally good at it.

The restaurant sits near Paseo de la Reforma — a small, hidden address that rewards the effort of finding it. The room is modest; the chairs have been described as uncomfortable, the space as compact. None of this matters once the food arrives. Iranian cuisine is one of the world's great culinary traditions, built on a relationship between sweet and sour, between dried fruits and saffron and slow-cooked meats and herbs, that has almost no equivalent in European or Mexican cooking. Papprika honours this tradition without diluting it for a foreign audience.

The Iranian rice is the anchor: basmati prepared by the tahdig method, the bottom crust formed deliberately, golden and slightly crisp, the grains above it separate and fragrant with saffron. It arrives as a foundation for everything else — the chicken and walnut khoresh with pomegranate, the lamb preparations, the vegetable stews — and it is as technically demanding as any rice preparation in the world, executed here with evident care. The lentil soup has the depth of something that has been made daily for decades. The menu skews heavily towards vegetarians without announcing it: the meze, the herb preparations, the legume dishes are substantial enough that those who do not eat meat will not feel compromised.
