The menu is the French-haute-cuisine canon at boutique-fine-dining execution. The signatures are the foie gras pan-seared with port-wine reduction, the Lake-Toba-trout meunière (the local Sumatran trout with the classic almond-butter preparation), the slow-cooked beef-bourguignon, the rack of New-Zealand lamb with rosemary-jus, the duck confit with cherry-reduction, and the classic French desserts (tarte Tatin, soufflé Grand Marnier, crème brûlée).
