Tiffany's has been a Wailuku institution since the 1950s. In 2021, Sheldon Simeon — Maui's most celebrated chef, two-time Top Chef finalist, two-time Fan Favorite — took over the kitchen with his wife Janice. The restaurant was promptly named to the New York Times 2023 list of the 50 Best Restaurants in America. This was not the story of a sleepy old neighborhood place getting a polish. It was the story of a Top Chef legend returning home and choosing to tell a Hawaii story specifically.

The menu is called "Hawai'i Classics" with absolute sincerity. It is Korean, Chinese, Japanese, Filipino, and Portuguese dishes as Maui families ate them through the plantation era and the decades that followed — but executed with the kind of technique you would expect from a restaurant at ten times the price. The room is unglamorous and that is the point: vinyl booths, a bar running the side wall, the warm hum of a restaurant loved by the neighborhood. For a first date looking to step off the resort script, there is no better decision on Maui.

Service is warm rather than polished. The servers tell the room's history — the original Tiffany's was owned for decades by Mike and Tiffany — and guide menu choices with the directness of people who actually eat there themselves. The wine list is modest; the beer list is better; the move is to drink Japanese sake or the rotating Hawaii-brewed pour. No reservations are taken. You sign up on the Yelp waitlist, walk around Wailuku's mid-century storefronts while you wait, and come back when the text comes.

What to Order

The Crispy Chicken with Calamansi Shoyu is the dish that earned the New York Times mention. Boneless thighs, rice-flour dredge, shatter-crisp skin, a calamansi (Philippine lime) shoyu dipping sauce that makes the plate addictive. Start there. The Garlic Rice with Pork Belly is the pantry dish the kitchen has perfected to a near-platonic level — order it to share, and watch the table fall quiet.

From the larger plates, the Fat Chow Fun — wide rice noodles in smoky soy sauce — is the Chinese-Hawaiian signature; the Miso Fish is the Japanese-Hawaiian; the Teriyaki Chicken is deliberately traditional and excellent. The Hamachi crudo sometimes appears on the specials board and is always worth choosing. For side dishes, the Kim Chee Fried Rice and the caramelised Brussels Sprouts are both stars in their own right. Close with the Kulolo (traditional Hawaiian taro-coconut pudding), a dessert that most tourist restaurants avoid.

Best Occasion Fit

Tiffany's is the first-date move for the diner who wants to signal something specific: I know the island, I know the chef, and I am choosing the real story over the resort script. That signal matters. Your date will notice. The room's lack of pretension lets a first conversation relax into itself — nobody is performing for a maître d'. The no-reservations policy adds a small adventure to the evening — you put your name on the list and go explore Wailuku's downtown together.

For solo dining, the bar seats are excellent — Wailuku regulars eat alone at Tiffany's without self-consciousness, and the bartenders are generous. For a team dinner of six or eight, it is unexpectedly perfect: the shared-plates menu is practically designed for a work group, and the bill will be a fraction of a Wailea equivalent for arguably better food. Compare with Tin Roof for Sheldon Simeon's casual lunch counter, or Lineage in Wailea for his Hawaii-regional pop-up-turned-permanent in the resort corridor. For oceanfront alternatives, Mama's Fish House and Merriman's Kapalua run at different price tiers.

Practical Information

Tiffany's is located at 1424 Lower Main Street in Wailuku's small historic downtown, about a 25-minute drive from Kahului Airport and 45 minutes from Wailea. Street parking is available; the side lot fills quickly during peak evening hours. The restaurant is open Monday through Thursday 4:00 to 10:00 PM, Friday and Saturday 11:00 AM to 10:00 PM, and Sunday 11:00 AM to 9:00 PM. No reservations — register on the Yelp waitlist before leaving your hotel or rental, and aim to be at the door twenty minutes before your text notification. Tuesday and Wednesday evenings offer the shortest waits. Dress is smart casual — Wailuku is a neighborhood, not a resort.
