About Dimora Ulmo

Dimora Ulmo Ristorante is the dining room of chef Michele Castelli — a Matera native who trained in three-Michelin-starred kitchens across Italy (Le Calandre in Padua under Massimiliano Alajmo and Da Vittorio in Bergamo under the Cerea family) before opening Dimora Ulmo in 2017. The restaurant occupies a beautifully restored 16th-century palazzo on Via Pennino in the Civita (the upper-town plateau between the two sassi), with stone-vaulted ceilings, hand-carved chestnut beams, and forty-eight covers across two rooms.

The menu is contemporary Italian with deep regional sourcing through the Lucanian larder. Signatures include a hand-rolled cavatelli with Lucanian lamb ragu and Pecorino di Filiano; a slow-cooked Lucanian lamb shoulder with thyme and peperone crusco crumb; a wood-fired Adriatic octopus with green olive and lemon confit; a Matera-bread tortino with sheep's-milk ricotta and fig jam; the famous 'tortino al cioccolato' — a Lucanian dark chocolate cake with peperoncino-infused gelato.

The wine list is the most serious in Matera — 600 references with deep Lucanian and Apulian coverage (Aglianico del Vulture verticals, Negroamaro, Primitivo), a respectable Italian-national section, and a tightly chosen Champagne and Burgundy programme. Sommelier Castelli himself runs the floor and the pairing flight at €68 is heavily Lucanian-led.

The room is intimate — forty-eight covers, stone-vaulted ceilings, low-amber-pendant lighting — and the kitchen pacing is leisurely. Castelli walks the room before the cheese course; the captains rotate from a year-round seasonal pool. Dimora Ulmo is the most reliable mid-tier client-entertaining address in Matera.
