About Vinag 1847

Vinag 1847 occupies the upper section of the historic Vinag wine cellar — a twenty-thousand-square-metre underground network of vaulted brick tunnels excavated in 1847 directly beneath the city centre. The restaurant runs in the eastern wing, in a series of candle-lit barrel-vaulted rooms with the working cellar (still holding several million litres of wine) extending into the dark beyond. It is among the most genuinely atmospheric dining rooms in Central Europe.

The kitchen runs a confident Štajerska menu built around the cellar's core proposition — wine pairing as the organising principle. Beef carpaccio with truffle and aged Sauvignon; sea bass with a Šipon butter sauce; Pohorje venison saddle with juniper and Welschriesling reduction; chocolate fondant with Halloze sweet wine. The four-course tasting is the right move; each plate is paired with a Vinag bottle the sommelier walks through at the table.

The wine list, naturally, is the deepest Slovenian Štajerska programme in the country — Vinag's own production runs over thirty bottlings, and the list extends into the small Slovenske Gorice and Halloze producers, an Austrian Burgenland section and a deep Furmint Hungarian Tokaj row that pairs unusually well with the Slovenian sweet wines.

Service is multilingual, runs at the considered cellar pace that the setting demands, and is led by the long-tenured Vinag staff. The cellar handles small private dining (four-to-twelve guests) particularly well and has been the booking of choice for Maribor's diplomatic and corporate dinners for decades. It is the most distinctive working dinner in the city.
