About Mak

Mak — the Slovenian word for poppy — opened in 2017 in a small Old Town room on Osojnikova ulica and was awarded one Michelin star in the inaugural 2020 Slovenian guide. It has held the star without interruption since. The dining room is small (twenty-eight covers), deliberately understated — pale oak, low pendant lighting, a kitchen counter that opens directly into the room — and runs a single tasting menu in two formats. Chef David Vračko is, by consensus, the most respected chef in Maribor.

The cooking is modern Slovenian in the most precise sense. Drava-river trout cured in pumpkin-seed oil with whey and fermented elderflower; Pohorje venison tartare with juniper and rye; aged Styrian beef with charred onion and beech ash; a dessert of plum, brown butter ice cream and toasted oat crumble. The seven-course tasting runs three hours; the four-course business lunch runs ninety minutes and is a strong working option for Maribor's growing number of tech and corporate visitors.

The wine list is the most serious in Maribor. Sommelier Marko Kramberger has built a programme of more than 600 references with vertical depth in the four Slovenian wine regions, a strong Austrian Burgenland and Wachau bench, a notable Friuli row, and a deep Burgundy spine. The pairings on the tasting are highly recommended; the by-the-glass programme rotates weekly. Mark-ups are notably fair given the cellar's depth.

Service is multilingual, attentive without hovering, and runs the tasting menu's arc with a Vienna-trained precision. Mak is the dinner you book when you want Slovenian fine dining to demonstrate its case for being taken seriously, and the room rises to that brief without performance. It is also the most decisive working business dinner in the city.

Mak is the room for impressing a Vienna or Zagreb client who arrived assuming Slovenia's fine dining is centred on Ljubljana.
