About Hiša Denk
Hiša Denk sits in the village of Polana on the gentle hills of Slovenske Gorice, twenty-five minutes' drive north of Maribor toward the Austrian border. The restaurant occupies the proprietor family's restored Štajerska farmhouse — pale-wood floors, hand-loomed Slovenian textiles, exposed wooden beams, and a small terrace looking out across the vineyards toward Pohorje. It has held a Michelin star since 2020 and is owned and run by chef Gregor Vračko, brother of David Vračko of Mak.
The cooking is rural Slovenian at the highest contemporary level. Drava-river crayfish with elderflower and whey; aged Štajerska beef with foraged mushrooms and pumpkin-seed crumble; Slovenske Gorice goose with chard and rye; a dessert of plum compote, toasted-buckwheat ice cream and birch syrup. The kitchen sources almost entirely within thirty kilometres — the menu writes the village name beside each main ingredient, in the same Štajerska tradition as Hiša Franko.
The wine programme is a serious treatment of the Slovenian wine country surrounding the restaurant. Sommelier Anja Vračko (the chef's wife) has built a list of about 350 references with strong representation of the small Slovenske Gorice and Halloze producers, an Austrian Burgenland section, and a deep Friuli row. The pairings on the tasting menu are best-in-class.
Service is family-run, warm, multilingual, and runs the tasting menu's arc with a careful pace that matches the rural setting. The room seats twenty-four; reservations on summer Saturdays often need to be made six weeks ahead. The drive from Maribor is the gentle Štajerska wine country at its prettiest. It is the most romantic destination dinner in the country.
