Voyager Estate

Voyager Estate Discovery is the five-course pairing-lunch programme of Voyager Estate — a 1991-founded Margaret River winery with a distinctive Cape Dutch architectural complex that the founders modelled on the wine estates of Stellenbosch — and is the most architecturally distinctive wine-country dining setting in Western Australia. The dining room sits in the Cape Dutch Cellar Door — a converted barrel-fermentation room with whitewashed Cape Dutch gables and 270-degree views of the Voyager Kitchen Gardens.

Chef Santi Valenzuela runs the five-course pairing programme. The format is a three-hour immersive lunch, with each course meticulously crafted to showcase sustainable, seasonal produce from the Voyager Kitchen Gardens and handpicked local artisans. Signatures rotate but typically include a hand-cut WA-coast tuna tartare with finger lime; a slow-cooked WA-Wagyu with native-pepper-leaf; a hand-rolled tagliolino with WA black truffle; a wood-fired WA-coast snapper; the famous 'Margaret River chocolate' for the dessert course.

The pairing programme is the Voyager Estate vertical — five vintages across the day's flight, plus a small selection of comparative Margaret River smallholders. The cellar at the back of the dining room is open to view.

The Cape Dutch Cellar Door and outdoor garden together hold ninety-six covers; the outdoor garden is the experience, with hand-pruned Cape-Dutch-style topiaries, a Voyager-rose-garden, and the Voyager vineyards visible behind. The lunch experience is the canonical Margaret River wine-country setting.
