About DINS Santi Taura
DINS — the name means "inside" in Mallorcan — is an apt title for a restaurant that functions as both a dining room and an interior monologue. Santi Taura was born on Mallorca, grew up eating its food, and left to cook elsewhere before returning to build the restaurant he had always imagined: one that takes traditional Mallorcan cuisine seriously enough to pursue a Michelin star for it.
He opened DINS in 2019 inside the El Llorenç Parc de la Mar boutique hotel, a few hundred metres from Palma's cathedral. The setting is warm and intimate — perhaps 30 covers, a calm stone-and-wood interior, the kind of room that feels personal rather than grand. Before service, Taura moves between tables, introducing himself and talking through the evening's menu. This is not performance; it is how he understands hospitality.
The Origens menu — 11 courses, with an optional three-course extension — changes seasonally and follows the logic of Mallorcan culinary tradition: pork, lamb, almond, olive, citrus, fresh fish from the island's markets. What Taura does is strip away accumulated habit and find the essential flavour of each ingredient, then reassemble it with a precision and lightness that feels simultaneously novel and deeply familiar to anyone who has eaten Mallorcan food all their life.
The wine pairings draw heavily on Mallorcan and Balearic producers — Binissalem reds, Pla i Llevant whites, natural wines from small island producers — and the sommelier team knows their list with the enthusiasm of people who have chosen it themselves. The price point, at around €115 for the tasting menu, makes DINS one of the best-value Michelin-starred meals in Spain.
The room fills quickly and the dining room is genuinely small. Book early, accept the chef's conversation before service, and surrender to an 11-course education in a place you thought you already understood.
Best for First Date
DINS Santi Taura works for a first date for a reason that most Michelin restaurants cannot claim: the chef comes to your table before the meal begins. This single act of hospitality — casual, warm, unhurried — sets a tone that makes two people who may not know each other well feel immediately at ease. By the time the first course arrives, the ice has been broken without anyone trying to break it.
The Origens menu then takes over. Eleven courses built around the geography and memory of an island gives a first date an inexhaustible supply of conversation — about the produce, about Mallorca, about the chef's childhood relationship with food, about what each course reminds you of. The food is ambitious enough to impress without being intimidating; the venue is elegant without feeling like a performance.
The best tables for a romantic first evening are the corner tables near the hotel courtyard. Request them when booking and arrive fifteen minutes early to settle in before Taura makes his rounds.
