About Rifugio Graffer
Rifugio Graffer al Grostè is a 1947-vintage stone-and-larch mountain refuge at 2,260 metres at the foot of the Grostè massif — the western face of the Brenta Dolomites — and is the canonical Madonna di Campiglio mountain-pasture lunch experience. The Graffer family has run the refuge since 1962 (the SAT — Società Alpinisti Tridentini — owns the building and licenses the operation to the family) and the hut is a Trentino farming-family business as much as a restaurant.
The menu is uncompromising mountain food. Hand-rolled canederli (the Trentino dumpling) with smoked speck and Trentingrana cheese; a slow-cooked Trentino game stew with Polenta taragna; a wood-fired pizza menu that uses a 1947 sourdough mother; the famous 'strudel di mele Graffer' that uses a 1947 family recipe and runs daily through both winter and summer seasons.
The room itself is the experience. Original 1947 stone walls, hand-carved larch panelling, three rooms across two floors, a south-facing terrace with two hundred seats and a direct view onto the Brenta Dolomites peaks (Cima Tosa, Cima Brenta, Cima Falkner), and a wood-burning Kachelofen stove that runs from late November to mid-April. The wine list is short and almost entirely Trentino — Ferrari sparkling, Foradori reds, Manincor whites — at the most reasonable mountain prices in the resort.
Service is mountain-warm and family-run — the captains rotate from the Graffer extended family and seasonal staff. The Graffer operates year-round (unusual for a Brenta refuge) — winter season mid-November to mid-April, summer season mid-June to mid-September, with a brief autumn closure in October-November and a brief spring closure in May. During February-March peak the south-terrace lunch is the canonical Madonna di Campiglio social moment.
