About Dolomieu
Dolomieu is the gastronomic restaurant of DV Chalet Boutique Hotel — a contemporary thirty-eight-room property opened in 2017 by the Volpi-De Conti family, named for the 18th-century French geologist Dieudonné Dolomieu (who first described the Dolomites mineral and gave the range its name) — and holds one Michelin star under chef Enrico Croatti, who took the kitchen in 2018. The dining room is the most architecturally striking of the village's recent openings — concrete-and-glass shell, hand-carved larch beams, a single open-flame kitchen at the centre of the room, and forty-two covers.
Croatti's cuisine is contemporary Italian with deep Trentino-Alto Adige sourcing. The seven-course tasting rotates seasonally; signatures include a hand-rolled tagliolino with Vezzena cheese and white truffle; a slow-roasted Adamello-Brenta roe deer with juniper jus and braised endive; a smoked Lake Garda lavarello with green tomato confit and basil oil; a wood-fired Adriatic octopus with lemon confit; the famous 'Sfogliatella alle mele del Trentino' — a Trentino-apple millefeuille that the pastry team has refined since 2018.
The wine list runs to 800 references with serious Trentino sparkling coverage (Ferrari, Rotari, Lunelli verticals), deep Alto Adige still wines, and a tightly chosen national section. Sommelier Christian Tomamicchel runs the floor and the pairing flight at €130 is heavily Trentino-led.
The dining room is the most modern of the village's three Michelin-starred rooms — bright, low-key, with a single open kitchen running the back wall and a chef's-counter for two. Service is precision — the captains rotate from a year-round seasonal pool and the pacing is exact.
