About Wahid Biryani

Wahid Biryani has operated from this Aminabad-market address since the 1950s and is one of the city's two most-cited biryani institutions (alongside Idris Biryani in Chowk). The kitchen has been featured in international travel writing — most notably in Anthony Bourdain's Lucknow segment of Parts Unknown — for the distinctive aroma of ghee-laden saffron rice that fills the alley around the restaurant when the morning dum pots are uncovered.

The signature is the Mutton Biryani at ₹180 — a single plate of saffron-tinted basmati rice with bone-in mutton chunks, rendered ghee, fried onions, and a subtle perfume of cardamom-and-rose. The mutton-and-rice ratio is heavier on rice than at Idris; the ghee-and-saffron aroma is more pronounced; the overall flavour is slightly sweeter (the Awadhi tradition of 'shahi' royal-style biryani versus Hyderabadi spicy 'kachi' style). The premium Special Mutton Biryani is ₹220.

Beyond biryani, Wahid runs a small Awadhi menu — galouti kebab (sourced from a partner Chowk kitchen), seekh kebab, mutton korma, and a small chicken-curry option. Most regulars order biryani-and-water-and-leave; there are no side dishes you need to order. The dum pots are sealed each morning at 9am and the meal service runs from noon until they sell out (usually 8-9pm depending on the day of the week).

The room is functional — a small ground-floor open dining area with steel tables and plastic chairs, fluorescent lighting, the open kitchen and the dum pots visible at the front of the shop. Walk-ins always work; the queue at the 1-3pm lunch peak runs fifteen minutes. Cash only; English is functional but not extensive; the menu is on a hand-written wall sign in Hindi-English.
