Jonathan Yao cooks a Taiwanese-American tasting menu at Kato in the ROW DTLA complex, and it holds two Michelin stars, the most decorated room on this list. The menu reworks the flavours Yao grew up with, from mantou to aged-fish courses, for around $225 a head. The room is small and the counter is the seat to want. Kato keeps a Wednesday-to-Sunday week, so Sunday is one of its trading nights, and a Sunday booking still needs notice.
