About JB Restavracija
JB Restavracija was opened by chef Janez Bratovž in 2002 at Miklošičeva cesta 17, a few minutes' walk north of the central Tromostovje. The restaurant is widely credited as the founding kitchen of modern Slovenian fine dining — Bratovž is the chef who opened the door for the entire generation that came after him.
JB was the first Slovenian restaurant to be included on The World's 50 Best Restaurants Discovery list and has held strong Gault&Millau recognition for over a decade. The cooking is Modern European with a deep Slovenian register — Adriatic fish from Piran, beef from the Karst, Štajerska poultry, foraged vegetables and herbs from across the country.
The format combines a focused à la carte and two tasting menus (a five-course at €95 and a longer chef's tasting at €140). The wine programme is the most thorough survey of serious Slovenian wine in any single restaurant in the country — Movia, Edi Simčič, Burja, Kabaj, and the full Vipava and Karst spectrum, plus deep French and Italian backbone.
The room is grown-up modernist — clean lines, dark wood, low light, around forty-five covers. Service is led by Bratovž's long-standing front-of-house team. Closed Sunday and Monday; book three weeks ahead for Friday or Saturday.
